I do think the chips matter. I'm a salted chip person and the fresher the better! I am not a huge queso fan (probably because t...Yum! I am not a huge queso fan (probably because the only queso you usually see out east is the movie theatre nachos kind... yuck!) but I do understand the love for vegetarian Mexican food. When I lived in Arizona there was a restaurant that served green chile and corn enchiladas with white sauce... they were to die for! I still dream about them and wish I could find some as good.
